Ashford Introduce Tasting Menu to George V

In order to further enhance the dining experience at Ashford, executive chef, Stefan Matz, has brought his signature 5 or 7-course tasting menu, made famous in Ashford’s former Connaught Room, right into the heart of the Castle’s fine dining restaurant, George V. This menu will now be available to guests seven nights a week, all year round, from the beginning of June.

Matz uses only the finest, seasonal produce in his kitchen, locally sourced wherever possible. His menus are inspired by the dramatic land and seascapes that surround the Castle; salmon from the Corrib; shellfish from Killary Harbour; oysters from Galway Bay; garlic grass from the Estate; and the sweetest mountain lamb from County Mayo. This bounty forms the basis of the three menus now available in George V.

Guests can choose from the A La Carte menu (classical dishes inspired by the ambience and décor of this elegant dining room which boasts no less than eleven Waterford crystal chandeliers!), the Table d’Hote menu (daily seasonal choices featuring a daily selected traditional dish from the locality and George V’s legendary carving trolley), and now a 5 or 7-course Menu Degustation; a wonderful taste of the Connaught region, with each course matched with its perfect wine partner by Robert Bowe, the Castle’s award-winning Sommelier, from the restaurant’s extensive cellars.

In addition to the George V, Ashford also offers two more casual dining options. The drawing room serves light meals and snacks throughout the day, as well as its world-renowned ‘Lady Ardilaun Afternoon Tea’. Cullen’s, a delightful, traditionally thatched cottage in the grounds of the castle provides bistro style cuisine with highlights on local seafood and steaks and is very popular with guests and locals alike.

Stefan won the “Best Chef in Connaught” at the Santa Rita / Irish Independent –Irish Restaurant Awards 2009.

Afternoon Tea
Afternoon Tea is served in the elegant Drawing Room with magnificent panoramic views of Lough Corrib.

Pre Dinner
Enjoy a pre-dinner cocktail in The Prince of Wales Cocktail Bar, specifically built for the visit of the Prince of Wales who subsequently became King George V in the late 1800's.

Dinner
During the summer season there is a choice of 2 restaurants: The George V Dining Room, offering classical Irish Cuisine; or the speciality Connaught Room restaurant, which offers classical French Cuisine.

The George V Dining Room, with room for 150 guests and breathtaking views across the river, luxurious furnishings and most discreet service, is the perfect setting in which to celebrate the traditional art of elegant dining.

The Connaught Room, with a capacity of 48, is Ashford's award-winning gourmet restaurant, rich in wood carvings and delicate furnishings.

The room is considered one of the finest in the castle. A unique and priceless feature is the hand crafted Inglenook reaching twenty feet to the oak ceiling.

After Dinner
Retire to the Dungeon Bar where nightly entertainment is provided.
