Head chef, Simon Crannage, enjoys an enviable reputation for the quality of the food served at Samuel's, Swinton Park's 3 AA Rosette Restaurant. The restaurant has been awarded membership of the esteemed Chaine de Rotisseurs association, and is listed in Hardens as a "Top Scorer". The hotel has also been awarded membership of the Tea Guild, in recognition of its excellent quality of service and high standards.

The emphasis in the restaurant menu is on seasonal and local produce inspired by the fruit, vegetables and herbs grown in the hotel's four acre walled garden (the largest hotel kitchen garden in the UK), and the menus change accordingly. The hotel is also surrounded by a 20,000 acre estate stretching from the River Ure in Wensleydale up onto the moorland Dales and estate venison, rabbit, smoked trout and game are a few examples of the local ingredients sourced from it.

Dinner in Samuel's Restaurant offers guests a choice of a Tasting Menu, Classic Menu or Garden Produce Menu. Samuel's Restaurant serves breakfast from 7.30 until 10.00am, lunch from 12.30 until 2.00pm, and Dinner from 7.00 until 9.30pm (Sunday to Thursday) and 10.00 on Fridays and Saturdays. We strongly recommend that guests reserve tables in Samuel's for lunch and dinner. Please note that Samuel's Restaurant is closed for lunch on Mondays and Tuesdays, except where a booking is made for a table of 8 or more guests.

The Castle Menu is available for lunch and dinner throughout the week, offering a lighter and less formal choice of "brasserie" style food. This can be served in Samuel's Restaurant, or (along with the Light Snacks and Refreshments Menu), in the Bar or on the Terrace (in summer months), in the Drawing Room or Private Sitting Room, or as Room Service.
