& herbs from their own gardens, shell fish from their own creels,
wild salmon from thier own nets and game from their own guns - venison,
duck and goose. And home baking aplenty to tempt even the most abstemious.
All things are possible, the choice is yours and Kevin, the castle's Head Chef, will enjoy planning menus and discussing what is at its best during your stay before you come.
A picnic overlooking the treacherous Pentland Firth, barbecue in Helen's Courtyard or a night of ceremony and sparkling silver and crystal under the watchful gaze of the ancestors in the Great Hall, the castle's guarantee remains the season's finest & freshest ingredients from the county's bountiful estates and varied coastline, served effortlessly with a smile.
Cut deep into the castle rock many surprises are to be discovered in the cellar. An ammunition store in the 1940's for the troops garrisoned at Ackergill but now returned to i's original purpose, they scour the auction houses to keep the cellar stocked with interesting and fine wines. And as the food Ackergill serves change with the seasons, so too does the wine that accompanies it.
