


Your stay at Forter Castle is self-catering. We can
however offer you the services of chef John Ramsey for those special
occasions. Using only the best local produce, John can create a mouth-watering
menu to meet your personal culinary preferences. During your stay, John
can also provide hampers filled with delicious local goodies.
On confirmation of your booking, Helen Proud, the castle's housekeeper
can arrange to stock the fridge, larder and drinks cabinet for you.
JOHN RAMSAY - YOUR CHEF
John
has been working as a chef for 20 years. During this time he has worked
in a wide range of establishments throughout Scotland, Switzerland,
Australia and New Zealand. In 1994 he attended the Escoffier School
Gastronomic at the Ritz Carlton Hotel in Paris. He has been accredited
in the Good Food Guide and been awarded 2 AA rosettes. In 1996 he
became self-employed, providing relief for award-winning
chefs, hotels and restaurants around northern Scotland. During this
time he was also catering at castles, private houses and shooting lodges.
This ranged from 1 week to 4 months and included wedding catering. He
also spent 5 months working as a personal chef at a château in Gstaad,
Switzerland.
In 1999 he moved to Australia and went back into restaurant cheffing,
working in a kitchen which gained a number of awards including American
Express 'Restaurant of the Year NSW' for 2 consecutive years. He also
worked freelance around the Sydney region doing a mix of restaurant
and private work.
John insists on working with the best produce and finest fresh food
available in Scotland. Over the years he has built an excellent relationship
with suppliers and can source the freshest fish and shellfish from the
west coast and meat from the local Perthshire hills and glens.
Rest assured that your banquet or wedding meal will be cooked and presented
to the highest standards using only the finest ingredients.
