Oscar Sinjorgo has been Head Chef at the castle since late August 2008. Being from Dutch origin, but having worked and lived in Scotland since 1994, he has taken to the Scots and their vast larder.
"It still surprises me how much food is produced in Scotland,
how well they keep it secret. When you find it, it is superb and a pleasure
to work with. I am impressed with the quality of the local produce and
sea food in particular. It is difficult not to spoil it, doing too much
with it and I prefer to let it speak for itself."
The platter will showcase the abundance and varieties available and
its contents change through out the year to reflect seasonality and
availability.
Because I feel scallops are best served hot, I serve them as a little
starter. All the other species are equally well served cold as hot,
but to give my guests the opportunity to try them all, cold on ice is
the best way.
The trifle is my cheeky take on 2 classics; the trifle and cranachan.
The carrageen is a seaweed used as a jelling agent to set the double
cream for the trifle, a raspberry biscuit provides a crunchy texture,
Drambuie the Scottish flavour and to top it, a small scoop of home made
honey sorbet from our resident bees.
I will be more than happy to come and speak to you in person about the
produce I use, our suppliers and possibly organise some for you to take
home. (Bring a cool box!)
All our shell fish comes from Tarbert and you are more than welcome
to visit the harbour and have a stroll round the village. Neil Prentice
is our main supplier and he is open to the public on week days. Our
main advantage is that we get our produce live. It is kept in sea water
tanks until it is picked for delivery at the castle. I only buy what
I think I need for that day, so sometimes I do run out, but never for
long."
Creating that feeling that they were made just for you, no matter which one you choose. This combination of modern guest standards laced with an unmistakable feeling of yesteryear is much talked about by visitors and undoubtedly remembered with fondness and affection. Bedrooms at Stonefield Castle include quality toiletries and other little touches to create the perfect welcome when you first open the door.
The crispness and character of the bedrooms, and the softness of the individual décor combine with classic furniture to provide a delight to the eye - and speak softly of the care with which the wonderful interior of the hotel has been preserved. Comfort rather than modernity is the theme - clear air, peaceful tranquillity - and a wonderful night's rest.
